- 1 or 2 romaine hearts, washed and chopped
- 1 English cucumber, peeled and sliced in chunky half-moons
- 1 ripe roma tomato, cut in wedges
- 5 pitted and sliced Kalamata olives
- 1 Tbsp. toasted pine nuts (optional)
- 3 oz. grilled chicken breast, chopped (optional)
- 1 serving Greek Dressing
Toss all ingredients together in bowl and serve immediately. Serves 1.
